Bucatini, sometimes referred to as Perciatelli has been a favorite of mine since childhood.  The cylindrical spaghetti like tubes of about 10 to 12 inches in length have a tiny hole, or buco, running through them.  Bucatini with Zucchini, Lemon & Pecorino combines lengths of raw zucchini, lemon, fresh herbs and sharp pecorino to create a simple yet flavorful pasta dish, ideal for entertaining a crowd.

Summer desserts should showcase the bounty of the fruit that only these sun filled months can bring, am I right?  Local berries, stone fruits, and melons are at their peak of perfection to enjoy and the possibilities are just endless.  One of my go to summer desserts is Strawberries with Prosecco, on a steamy day after a long dinner there is nothing better.  Deep ripe strawberries bathed in lemon scented slightly sweetened Prosecco Il Colle.

But sometimes you want a bit of crunch to nibble alongside your Strawberries with Prosecco, nothing too imposing, something crisp and delicately flavored.  A nice cookie as Mio Marito’s grandmother would say, would be perfect….

Those layers of eggplant, veal or chicken held together with melted cheese and tasty tomato sauce; almost a savory layer cake to be sliced into squares and served. But it’s summer, is that how you really want to spend your time in the kitchen – never mind the dreaded frying.  Summer Zucchini Parmigiana is a fresh seasonal approach to an old classic which delivers bright flavors reminiscent of the parmigiana dishes of your childhood.
